Mujaddara

Ingredients
- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 large (about 150 grams)
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish (optional)
Steps
- Rinse the green lentils under cold water and soak them for 30 minutes in a bowl.
- Peel and thinly slice the onion.
- In a medium pot, heat 2 tablespoons of olive oil over medium heat and add the sliced onions. Cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Remove half for garnishing later.
- Add the soaked lentils to the pot with the remaining onions and pour in 500 milliliters of water. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
- Add the rinsed rice, cumin, salt, and black pepper to the pot. Stir well, cover again, and cook for an additional 20 minutes or until the rice and lentils are tender and the water has been absorbed.
- Fluff the Mujaddara with a fork and let it sit for 5 minutes before serving.
- Serve warm, topped with the reserved caramelized onions and garnished with fresh parsley if desired.
