Mujadara with Yogurt
Mujadara is a traditional Lebanese dish made with lentils, rice, and caramelized onions, served with creamy yogurt. This hearty breakfast is not only delicious but also packed with nutrients, making it a perfect start to your day.

Ingredients
- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 2 medium (about 200 grams)
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Yogurt - 200 grams
- Fresh parsley - for garnish (optional)
Steps
- Rinse the lentils under cold water and soak them in water for about 30 minutes.
- In a pot, add the soaked lentils and 400 ml of water. Bring to a boil, then reduce to a simmer for 15 minutes.
- Meanwhile, rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Slice the onions thinly and add them to the skillet. Cook, stirring occasionally, until they are deep golden brown and caramelized, about 15-20 minutes.
- Once the lentils are cooked, add the rinsed rice, cumin, salt, and black pepper to the pot with the lentils. Stir well and add an additional 400 ml of water. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes until the rice is tender and the liquid is absorbed.
- Once the rice and lentils are cooked, fluff them with a fork and let them sit covered for 5 minutes.
- Serve the Mujadara topped with the caramelized onions and a dollop of yogurt on the side. Garnish with fresh parsley if desired.
