Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 100 grams
  • Water - 600 ml
  • Onion - 1 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Seaweed (nori or wakame) - 10 grams, dried and cut into strips
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the brown lentils under cold water, then place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender but not mushy. Drain and set aside.
  2. In a separate pot, rinse the basmati rice under cold water until the water runs clear. Add the rice to the pot with 300 ml of fresh water, bring to a boil, then reduce to low heat, cover, and cook for 15 minutes until all the water is absorbed. Fluff with a fork and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until caramelized and golden brown, about 10-12 minutes.
  4. Add the cooked lentils, cooked rice, cumin powder, salt, and black pepper to the skillet with the caramelized onions. Stir gently to combine and heat through for about 5 minutes.
  5. Add the seaweed strips and lemon juice, stirring well to incorporate. Cook for an additional 2-3 minutes until the seaweed is slightly softened.
  6. Serve the Mujadara hot, garnished with fresh parsley.
