Ingredients

  • Green lentils - 150 grams
  • Onion - 1 large (about 200 grams)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 milliliters
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the green lentils under cold water and drain them.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until it becomes soft and caramelized, about 15 minutes. Stir occasionally to ensure even cooking.
  3. Add minced garlic to the pot and cook for an additional minute until fragrant.
  4. Add the rinsed lentils to the pot along with cumin, coriander, salt, and pepper. Stir to combine.
  5. Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 25 minutes or until the lentils are tender and most of the water is absorbed.
  6. Taste and adjust the seasoning if necessary.
  7. Serve the Mujadara warm, garnished with fresh parsley if desired.
