- Green lentils - 150 grams

- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 500 milliliters
- Fresh parsley - for garnish (optional)
Steps
- Rinse the green lentils under cold water and drain them.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until it becomes soft and caramelized, about 15 minutes. Stir occasionally to ensure even cooking.
- Add minced garlic to the pot and cook for an additional minute until fragrant.
- Add the rinsed lentils to the pot along with cumin, coriander, salt, and pepper. Stir to combine.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 25 minutes or until the lentils are tender and most of the water is absorbed.
- Taste and adjust the seasoning if necessary.
- Serve the Mujadara warm, garnished with fresh parsley if desired.
