Ingredients

  • Green lentils - 100 grams
  • Basmati rice - 100 grams
  • Water - 500 ml
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • White fish fillets (such as cod or haddock) - 200 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 500 ml of water. Bring to a boil, then reduce heat and simmer for 15 minutes until just tender.
  2. Add the basmati rice to the lentils, along with 1 teaspoon of salt and cumin. Stir well and cover the pot, cooking on low heat for an additional 15-18 minutes until the rice is fluffy and the water is absorbed.
  3. In a separate pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until golden brown, about 8-10 minutes. Add the minced garlic, paprika, black pepper, and cook for another minute until fragrant.
  4. In the same pan, push the onion mixture to the side and add the fish fillets. Drizzle with lemon juice, season with salt and pepper, and cook for 3-4 minutes on each side until the fish is cooked through and flaky.
  5. To serve, fluff the mujadarra (lentils and rice) with a fork and divide it between two plates. Top with the fish fillets and garnish with chopped parsley.
