- Cauliflower - 400 grams, riced
- Green lentils - 150 grams, dry
- Onion - 1 large, thinly sliced
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 600 milliliters
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the green lentils under cold water and soak them in water for 15 minutes. Drain and set aside.
- In a medium pot, bring 600 milliliters of water to a boil. Add the soaked lentils, cumin, salt, and black pepper. Reduce the heat and simmer for about 20-25 minutes, or until the lentils are tender but not mushy.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they become golden brown and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.
- Add the riced cauliflower to the skillet with the caramelized onions, and drizzle with the remaining tablespoon of olive oil. Stir to combine and sauté for an additional 5-7 minutes until the cauliflower is tender.
- Once the lentils are cooked, drain any excess water and add them to the skillet with the cauliflower and onions. Mix well and cook for another 2-3 minutes to heat through.
- Remove from heat, garnish with chopped fresh parsley, and serve warm.
