Ingredients

  • Cauliflower - 400 grams, riced
  • Green lentils - 150 grams, dry
  • Onion - 1 large, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 600 milliliters
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the green lentils under cold water and soak them in water for 15 minutes. Drain and set aside.
  2. In a medium pot, bring 600 milliliters of water to a boil. Add the soaked lentils, cumin, salt, and black pepper. Reduce the heat and simmer for about 20-25 minutes, or until the lentils are tender but not mushy.
  3. While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and sauté until they become golden brown and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.
  4. Add the riced cauliflower to the skillet with the caramelized onions, and drizzle with the remaining tablespoon of olive oil. Stir to combine and sauté for an additional 5-7 minutes until the cauliflower is tender.
  5. Once the lentils are cooked, drain any excess water and add them to the skillet with the cauliflower and onions. Mix well and cook for another 2-3 minutes to heat through.
  6. Remove from heat, garnish with chopped fresh parsley, and serve warm.
