Ingredients

  • Green lentils - 100 grams
  • Basmati rice - 100 grams
  • Onion - 2 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils and soak them in water for about 30 minutes, then drain.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook, stirring frequently, until the onions are caramelized and golden brown, about 15-20 minutes. Remove half of the onions and set aside for garnish.
  3. Add the drained lentils to the pot with the remaining onions and toast for 2-3 minutes.
  4. Add the cumin, salt, and pepper, then pour in the water. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
  5. Stir in the rinsed basmati rice and add a bit more water if necessary. Cover and simmer for another 15-20 minutes, or until the rice and lentils are cooked and water is absorbed.
  6. Fluff the Mujadara with a fork and serve hot, garnished with the reserved caramelized onions and fresh parsley.
