Mujadara with Caramelized Onions

Ingredients
- Green lentils - 100 grams
- Basmati rice - 100 grams
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Fresh parsley - for garnish
Steps
- Rinse the lentils and soak them in water for about 30 minutes, then drain.
- In a pot, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook, stirring frequently, until the onions are caramelized and golden brown, about 15-20 minutes. Remove half of the onions and set aside for garnish.
- Add the drained lentils to the pot with the remaining onions and toast for 2-3 minutes.
- Add the cumin, salt, and pepper, then pour in the water. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
- Stir in the rinsed basmati rice and add a bit more water if necessary. Cover and simmer for another 15-20 minutes, or until the rice and lentils are cooked and water is absorbed.
- Fluff the Mujadara with a fork and serve hot, garnished with the reserved caramelized onions and fresh parsley.
