  • Green lentils - 100 grams

  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 750 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes, stirring occasionally.
  2. Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables soften.
  3. Add the green lentils, brown rice, cumin, coriander, salt, and black pepper to the pot. Stir to combine.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils and rice are tender.
