- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 750 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes, stirring occasionally.
- Stir in the minced garlic, diced carrot, and diced celery. Cook for an additional 5 minutes until the vegetables soften.
- Add the green lentils, brown rice, cumin, coriander, salt, and black pepper to the pot. Stir to combine.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils and rice are tender.
