Mujadara Samak

Ingredients
- Brown lentils - 100 grams
- Basmati rice - 100 grams
- Seaweed flakes - 2 tablespoons
- Olive oil - 3 tablespoons
- Onion - 1 large, thinly sliced
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and soak them for 30 minutes.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until caramelized, about 10-15 minutes.
- Add minced garlic, cumin, coriander, paprika, black pepper, and salt to the pot. Stir for another 2 minutes until fragrant.
- Drain the lentils and add them to the pot along with vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- Meanwhile, rinse the basmati rice under cold water until the water runs clear. After 20 minutes, add the rice to the lentils, stir, and cook for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- In a small bowl, mix seaweed flakes with lemon juice and the remaining olive oil.
- Once the rice and lentils are cooked, remove from heat and let sit covered for 5 minutes. Fluff with a fork.
- Serve the Mujadara Samak warm, drizzled with the seaweed mixture and garnished with fresh parsley.
