Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 100 grams
  • Seaweed flakes - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Onion - 1 large, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and soak them for 30 minutes.
  2. In a medium pot, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until caramelized, about 10-15 minutes.
  3. Add minced garlic, cumin, coriander, paprika, black pepper, and salt to the pot. Stir for another 2 minutes until fragrant.
  4. Drain the lentils and add them to the pot along with vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  5. Meanwhile, rinse the basmati rice under cold water until the water runs clear. After 20 minutes, add the rice to the lentils, stir, and cook for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. In a small bowl, mix seaweed flakes with lemon juice and the remaining olive oil.
  7. Once the rice and lentils are cooked, remove from heat and let sit covered for 5 minutes. Fluff with a fork.
  8. Serve the Mujadara Samak warm, drizzled with the seaweed mixture and garnished with fresh parsley.
