Mujadara Salad

Ingredients
- Green lentils - 100 grams
- Water - 500 milliliters
- Medium onion - 1, sliced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber - 1, diced
- Tomato - 1, diced
- Parsley - 2 tablespoons, chopped
- Mint - 1 tablespoon, chopped
- Lemon juice - 2 tablespoons
- Sumac - 1 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a pot with 500ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook for about 10 minutes, stirring frequently, until the onions are caramelized and golden brown.
- In a large bowl, combine the cooked lentils, diced cucumber, diced tomato, chopped parsley, and chopped mint.
- In a small bowl, whisk together the lemon juice, sumac, salt, and black pepper. Pour the dressing over the lentil mixture and toss gently to combine.
- Top the salad with the caramelized onions and serve warm or at room temperature.
