Ingredients

  • Green lentils - 100 grams
  • Water - 500 milliliters
  • Medium onion - 1, sliced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cucumber - 1, diced
  • Tomato - 1, diced
  • Parsley - 2 tablespoons, chopped
  • Mint - 1 tablespoon, chopped
  • Lemon juice - 2 tablespoons
  • Sumac - 1 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 500ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook for about 10 minutes, stirring frequently, until the onions are caramelized and golden brown.
  3. In a large bowl, combine the cooked lentils, diced cucumber, diced tomato, chopped parsley, and chopped mint.
  4. In a small bowl, whisk together the lemon juice, sumac, salt, and black pepper. Pour the dressing over the lentil mixture and toss gently to combine.
  5. Top the salad with the caramelized onions and serve warm or at room temperature.
