Ingredients

  • Cauliflower - 1 medium head, grated into rice
  • Brown lentils - 100 grams
  • Onion - 1 large, thinly sliced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Pepper - 1/2 teaspoon
  • Water - 500 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown lentils under cold water and soak them for 30 minutes (optional for faster cooking).
  2. In a medium pot, add the lentils and 500 ml of water. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until the lentils are tender. Drain and set aside.
  3. While the lentils are cooking, heat olive oil in a large skillet over medium heat. Add the sliced onion and cook, stirring frequently, until golden brown and caramelized, about 10-15 minutes.
  4. Add the grated cauliflower rice to the skillet with the caramelized onions, followed by cumin, coriander, salt, and pepper. Stir well to combine and cook for an additional 5-7 minutes until the cauliflower is tender.
  5. Fold in the cooked lentils and mix to incorporate all ingredients. Cook for another 2-3 minutes to heat through.
  6. Serve warm, garnished with chopped fresh parsley.
