Ingredients

  • Pizza dough - 200 grams
  • Brown lentils - 100 grams
  • Onion - 2 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Lemon - 1, for serving

Steps

  1. Rinse the brown lentils under cold water and then boil them in a pot of salted water for about 15-20 minutes or until tender. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-15 minutes, stirring occasionally.
  3. Add the minced garlic, cumin, coriander, black pepper, and salt to the caramelized onions. Cook for an additional 2 minutes until fragrant.
  4. In a bowl, combine the cooked lentils with the onion mixture and stir in the chopped parsley. This will be your pizza topping.
  5. Preheat your oven to 220°C (428°F). Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a baking sheet or pizza stone.
  6. Spread the lentil and onion mixture evenly over the pizza dough. Sprinkle the shredded mozzarella cheese and crumbled feta cheese on top.
  7. Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  8. Once baked, remove the pizza from the oven and let it cool for a few minutes. Squeeze fresh lemon juice over the top before slicing and serving.
