- Pizza dough - 200 grams
- Brown lentils - 100 grams
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Lemon - 1, for serving
Steps
- Rinse the brown lentils under cold water and then boil them in a pot of salted water for about 15-20 minutes or until tender. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until they are caramelized, about 10-15 minutes, stirring occasionally.
- Add the minced garlic, cumin, coriander, black pepper, and salt to the caramelized onions. Cook for an additional 2 minutes until fragrant.
- In a bowl, combine the cooked lentils with the onion mixture and stir in the chopped parsley. This will be your pizza topping.
- Preheat your oven to 220°C (428°F). Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a baking sheet or pizza stone.
- Spread the lentil and onion mixture evenly over the pizza dough. Sprinkle the shredded mozzarella cheese and crumbled feta cheese on top.
- Bake the pizza in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
- Once baked, remove the pizza from the oven and let it cool for a few minutes. Squeeze fresh lemon juice over the top before slicing and serving.
