Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 100 grams
  • Nori seaweed sheets - 2 sheets, torn into pieces
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Vegetable broth - 400 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown lentils under cold water and soak them for 30 minutes, then drain.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and sauté the sliced onion until golden brown, about 8-10 minutes.
  3. Add the minced garlic, cumin, and coriander to the pot, cooking for another 1-2 minutes until fragrant.
  4. Add the rinsed lentils and vegetable broth to the pot, bring to a boil, then reduce heat and simmer covered for 15 minutes.
  5. Stir in the basmati rice and torn nori pieces, season with salt and black pepper, then cover and cook for an additional 15-20 minutes until the rice and lentils are tender and the liquid is absorbed.
  6. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork.
  7. Drizzle with the remaining olive oil and lemon juice, and garnish with fresh parsley before serving.
