Ingredients
- Brown lentils - 100 grams
- Basmati rice - 150 grams
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Vegetable broth - 500 milliliters
- Ground cumin - 1 teaspoon
- Ground coriander - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the brown lentils under cold water and place them in a pot with 300 milliliters of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until just tender. Drain and set aside.
- In another pot, rinse the basmati rice under cold water and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they become golden and caramelized, about 15-20 minutes. Remove half of the onions and set aside for topping.
- To the remaining onions in the skillet, add the drained lentils, basmati rice, cumin, coriander, salt, black pepper, and cinnamon. Stir to combine well.
- Pour in the remaining 200 milliliters of vegetable broth and bring to a simmer. Once simmering, cover the pot, reduce the heat to low, and cook for 15 minutes until the rice absorbs the liquid.
- Transfer the lentil and rice mixture to a greased baking dish, spreading it evenly. Top with the reserved caramelized onions and drizzle with the remaining 1 tablespoon of olive oil.
- Bake in the preheated oven for 15 minutes. Once done, remove from the oven and let it rest for 5 minutes.
- Garnish with fresh parsley before serving.
