Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 150 grams
  • Onion - 2 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 500 milliliters
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the brown lentils under cold water and place them in a pot with 300 milliliters of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until just tender. Drain and set aside.
  3. In another pot, rinse the basmati rice under cold water and set aside.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until they become golden and caramelized, about 15-20 minutes. Remove half of the onions and set aside for topping.
  5. To the remaining onions in the skillet, add the drained lentils, basmati rice, cumin, coriander, salt, black pepper, and cinnamon. Stir to combine well.
  6. Pour in the remaining 200 milliliters of vegetable broth and bring to a simmer. Once simmering, cover the pot, reduce the heat to low, and cook for 15 minutes until the rice absorbs the liquid.
  7. Transfer the lentil and rice mixture to a greased baking dish, spreading it evenly. Top with the reserved caramelized onions and drizzle with the remaining 1 tablespoon of olive oil.
  8. Bake in the preheated oven for 15 minutes. Once done, remove from the oven and let it rest for 5 minutes.
  9. Garnish with fresh parsley before serving.
