Ingredients

  • Brown lentils - 100 grams
  • Long-grain rice - 100 grams
  • Onion - 1 large, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Yogurt - 200 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 3 cups of water. Bring to a boil, reduce heat, and simmer for about 20 minutes until tender.
  2. While the lentils are cooking, rinse the long-grain rice under cold water until the water runs clear. Once the lentils are cooked, add the rice to the pot with the lentils, along with 2 cups of water, ground cumin, and salt. Bring to a boil, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Season with salt and black pepper to taste.
  4. In a small bowl, mix the yogurt with lemon juice and a pinch of salt. Adjust the seasoning according to your taste.
  5. Once the lentils and rice are cooked, fluff them with a fork and serve on plates. Top with the caramelized onions and a dollop of the yogurt mixture. Garnish with fresh parsley.
