- Brown lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 large, thinly sliced
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Yogurt - 200 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and place them in a pot with 3 cups of water. Bring to a boil, reduce heat, and simmer for about 20 minutes until tender.
- While the lentils are cooking, rinse the long-grain rice under cold water until the water runs clear. Once the lentils are cooked, add the rice to the pot with the lentils, along with 2 cups of water, ground cumin, and salt. Bring to a boil, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and water is absorbed.
- In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 10-15 minutes. Season with salt and black pepper to taste.
- In a small bowl, mix the yogurt with lemon juice and a pinch of salt. Adjust the seasoning according to your taste.
- Once the lentils and rice are cooked, fluff them with a fork and serve on plates. Top with the caramelized onions and a dollop of the yogurt mixture. Garnish with fresh parsley.
