Ingredients

  • Bulgur wheat - 100 grams
  • Green or brown lentils - 100 grams
  • Water - 500 milliliters
  • Onion - 2 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and soak them for about 15 minutes.
  2. In a pot, bring 500 ml of water to a boil. Add the soaked lentils and cook for about 15-20 minutes until they are tender but not mushy.
  3. While the lentils are cooking, heat 3 tablespoons of olive oil in a skillet over medium heat.
  4. Add the thinly sliced onions to the skillet and sauté until they become golden and caramelized, about 15-20 minutes, stirring occasionally.
  5. Once the lentils are cooked, drain any excess water and add them to the skillet with the caramelized onions.
  6. Stir in the bulgur wheat, ground cumin, salt, and black pepper. Mix well to combine all the ingredients.
  7. Add 250 ml of water to the mixture and bring it to a simmer.
  8. Cover the skillet and cook on low heat for about 15 minutes, or until the bulgur is tender and has absorbed the water.
  9. Remove from heat and let it sit covered for an additional 5 minutes.
  10. Fluff the Mujadara with a fork, garnish with chopped parsley, and serve warm.
