Ingredients
- Bulgur wheat - 100 grams
- Green or brown lentils - 100 grams
- Water - 500 milliliters
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the lentils under cold water and soak them for about 15 minutes.
- In a pot, bring 500 ml of water to a boil. Add the soaked lentils and cook for about 15-20 minutes until they are tender but not mushy.
- While the lentils are cooking, heat 3 tablespoons of olive oil in a skillet over medium heat.
- Add the thinly sliced onions to the skillet and sauté until they become golden and caramelized, about 15-20 minutes, stirring occasionally.
- Once the lentils are cooked, drain any excess water and add them to the skillet with the caramelized onions.
- Stir in the bulgur wheat, ground cumin, salt, and black pepper. Mix well to combine all the ingredients.
- Add 250 ml of water to the mixture and bring it to a simmer.
- Cover the skillet and cook on low heat for about 15 minutes, or until the bulgur is tender and has absorbed the water.
- Remove from heat and let it sit covered for an additional 5 minutes.
- Fluff the Mujadara with a fork, garnish with chopped parsley, and serve warm.
