Ingredients
- Basmati rice - 100 grams
- Green lentils - 100 grams
- Onion - 2 medium, thinly sliced
- Olive oil - 3 tablespoons
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - for garnish (optional)
Steps
- Rinse the basmati rice and green lentils under cold water until the water runs clear.
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove half of the onions and set aside for topping.
- To the remaining onions in the saucepan, add the rinsed lentils, cumin powder, salt, and black pepper. Stir well and cook for 2 minutes.
- Add the vegetable broth to the saucepan and bring to a boil. Once boiling, add the rinsed basmati rice and stir. Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Fluff the Mujadara with a fork and serve hot, topped with the reserved caramelized onions and garnished with cilantro if desired.
