Ingredients

  • Basmati rice - 100 grams
  • Green lentils - 100 grams
  • Onion - 2 medium, thinly sliced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - for garnish (optional)

Steps

  1. Rinse the basmati rice and green lentils under cold water until the water runs clear.
  2. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove half of the onions and set aside for topping.
  3. To the remaining onions in the saucepan, add the rinsed lentils, cumin powder, salt, and black pepper. Stir well and cook for 2 minutes.
  4. Add the vegetable broth to the saucepan and bring to a boil. Once boiling, add the rinsed basmati rice and stir. Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  5. Fluff the Mujadara with a fork and serve hot, topped with the reserved caramelized onions and garnished with cilantro if desired.
