Ingredients
- Green or brown lentils - 100 grams
- Long-grain rice - 100 grams
- Medium onion - 1, thinly sliced
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 4 cups
Steps
- Rinse the lentils under cold water and place them in a pot with 2 cups of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes until tender.
- In a separate pot, rinse the rice and add it to the pot with 2 cups of water. Bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes or until the water is absorbed and the rice is fluffy.
- While the lentils and rice are cooking, heat 3 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they become deeply caramelized, about 10-15 minutes.
- Once lentils and rice are cooked, combine them in a large bowl, add ground cumin, salt, and pepper, and mix well.
- Serve the mujadara topped with the caramelized onions and enjoy hot.
