Ingredients

  • Green or brown lentils - 100 grams
  • Long-grain rice - 100 grams
  • Medium onion - 1, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 4 cups

Steps

  1. Rinse the lentils under cold water and place them in a pot with 2 cups of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes until tender.
  2. In a separate pot, rinse the rice and add it to the pot with 2 cups of water. Bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes or until the water is absorbed and the rice is fluffy.
  3. While the lentils and rice are cooking, heat 3 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they become deeply caramelized, about 10-15 minutes.
  4. Once lentils and rice are cooked, combine them in a large bowl, add ground cumin, salt, and pepper, and mix well.
  5. Serve the mujadara topped with the caramelized onions and enjoy hot.
