Ingredients

  • Roasted red bell peppers - 200 grams
  • Walnuts - 100 grams
  • Garlic - 1 clove
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pomegranate seeds - 2 tablespoons (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the walnuts on a baking tray and roast them in the oven for about 10 minutes, or until golden and fragrant. Allow them to cool.
  3. While the walnuts are roasting, char the red bell peppers over an open flame or under the broiler until the skin is blackened and blistered. Place them in a bowl and cover with plastic wrap to steam for about 10 minutes.
  4. Once the peppers are cool, peel off the skin, remove the seeds, and chop them coarsely.
  5. In a food processor, combine the roasted walnuts, garlic, olive oil, lemon juice, ground cumin, paprika, salt, and the chopped roasted red peppers.
  6. Blend until smooth, adjusting the consistency with a little water if necessary.
  7. Transfer the Muhammara to a serving bowl and garnish with chopped parsley and pomegranate seeds.
  8. Serve immediately with pita bread or as a side salad.
