Ingredients

  • Roasted red peppers - 200 grams
  • Walnuts - 80 grams
  • Garlic - 1 clove
  • Olive oil - 2 tablespoons
  • Pomegranate molasses - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F) if you need to roast fresh red peppers.
  2. If using fresh peppers, place them on a baking sheet and roast for 20-25 minutes until the skins are charred. Allow to cool, then peel and remove seeds.
  3. In a food processor, combine the roasted red peppers, walnuts, garlic, olive oil, pomegranate molasses, ground cumin, cayenne pepper, salt, lemon juice, and water.
  4. Blend until smooth and creamy, scraping down the sides as needed.
  5. Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
  6. Transfer the dip to a serving bowl and drizzle with a bit of olive oil on top before serving.
