Ingredients
- Eggplant - 1 medium (about 250g)
- Tahini - 2 tablespoons
- Garlic - 1 clove, minced
- Lemon juice - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/4 teaspoon
- Pita bread - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1/2 medium, sliced
- Fresh parsley - 1/4 cup, chopped
- Red onion - 1/4 medium, thinly sliced
- Harissa (optional) - 1 teaspoon
- Feta cheese (optional) - 50g, crumbled
Steps
- Preheat your oven to 200°C (400°F).
- Cut the eggplant in half lengthwise and score the flesh with a knife. Drizzle 1 tablespoon of olive oil over the cut sides and sprinkle with salt and pepper.
- Place the eggplant halves cut-side down on a baking sheet and roast for 25 minutes or until the flesh is soft and slightly caramelized.
- Once the eggplant is roasted, scoop out the flesh and add it to a mixing bowl. Mix in tahini, minced garlic, lemon juice, cumin, and the remaining olive oil. Mash until smooth and creamy.
- Toast the pita bread in the oven for a few minutes until warm and slightly crisp.
- Spread a generous amount of the moutabal mixture onto each piece of pita bread.
- Top with sliced tomatoes, cucumbers, red onion, and parsley. Add harissa and feta cheese if desired.
- Fold the pita in half and serve immediately.
