Ingredients

  • Eggplant - 1 medium (about 250g)
  • Tahini - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/4 teaspoon
  • Pita bread - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2 medium, sliced
  • Fresh parsley - 1/4 cup, chopped
  • Red onion - 1/4 medium, thinly sliced
  • Harissa (optional) - 1 teaspoon
  • Feta cheese (optional) - 50g, crumbled

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the eggplant in half lengthwise and score the flesh with a knife. Drizzle 1 tablespoon of olive oil over the cut sides and sprinkle with salt and pepper.
  3. Place the eggplant halves cut-side down on a baking sheet and roast for 25 minutes or until the flesh is soft and slightly caramelized.
  4. Once the eggplant is roasted, scoop out the flesh and add it to a mixing bowl. Mix in tahini, minced garlic, lemon juice, cumin, and the remaining olive oil. Mash until smooth and creamy.
  5. Toast the pita bread in the oven for a few minutes until warm and slightly crisp.
  6. Spread a generous amount of the moutabal mixture onto each piece of pita bread.
  7. Top with sliced tomatoes, cucumbers, red onion, and parsley. Add harissa and feta cheese if desired.
  8. Fold the pita in half and serve immediately.
