Ingredients

  • Brown lentils - 100 grams
  • Eggplant - 1 medium (about 250 grams)
  • Red onion - 1 small (about 70 grams), diced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chickpea flour - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Whole wheat burger buns - 2
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Tomato - 1 medium, sliced
  • Cucumber - 1/2, sliced

Steps

  1. Rinse the brown lentils under cold water and cook in a pot with 300 ml of water for about 20-25 minutes until tender. Drain and set aside.
  2. While the lentils are cooking, preheat the oven to 200°C (390°F). Cut the eggplant into cubes, toss with 1 tablespoon of olive oil, salt, and pepper, and spread on a baking sheet. Roast for 15-20 minutes until golden brown.
  3. In a large mixing bowl, combine the cooked lentils, roasted eggplant, diced red onion, minced garlic, cumin, cinnamon, chickpea flour, and the remaining tablespoon of olive oil. Mix well and form into two burger patties.
  4. Heat a non-stick skillet over medium heat and cook the patties for about 5-7 minutes on each side until crispy and golden brown.
  5. In a small bowl, mix the tahini with lemon juice and a pinch of salt to create a sauce.
  6. To assemble the burgers, place each patty on a whole wheat bun, drizzle with tahini sauce, and top with sliced tomatoes, cucumbers, and chopped parsley.
