Ingredients

  • Eggplant - 200 grams
  • Bell peppers (mix of red and green) - 150 grams
  • Zucchini - 150 grams
  • Garlic - 4 cloves
  • Olive oil - 4 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 30 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and dice the eggplant, bell peppers, and zucchini into bite-sized pieces.
  3. Mince the garlic cloves and set aside.
  4. In a large mixing bowl, combine the diced vegetables, minced garlic, olive oil, salt, black pepper, paprika, and cumin. Toss until the vegetables are evenly coated.
  5. Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
  6. Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  7. Remove the tray from the oven and let the vegetables cool slightly.
  8. Once cooled, transfer the roasted vegetables to a clean jar, add lemon juice, and mix gently.
  9. Chop the fresh parsley and sprinkle it over the top of the vegetable mixture.
  10. Seal the jar and let it sit for at least 10 minutes before serving to allow the flavors to meld.
