- Eggplant - 200 grams

- Zucchini - 150 grams
- Garlic - 4 cloves
- Olive oil - 4 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 30 grams
Steps
- Preheat your oven to 200°C (400°F).
- Wash and dice the eggplant, bell peppers, and zucchini into bite-sized pieces.
- Mince the garlic cloves and set aside.
- In a large mixing bowl, combine the diced vegetables, minced garlic, olive oil, salt, black pepper, paprika, and cumin. Toss until the vegetables are evenly coated.
- Spread the vegetable mixture evenly on a baking tray lined with parchment paper.
- Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.
- Remove the tray from the oven and let the vegetables cool slightly.
- Once cooled, transfer the roasted vegetables to a clean jar, add lemon juice, and mix gently.
- Chop the fresh parsley and sprinkle it over the top of the vegetable mixture.
- Seal the jar and let it sit for at least 10 minutes before serving to allow the flavors to meld.
