Ingredients

  • Zucchini - 100 grams, diced
  • Eggplant - 100 grams, diced
  • Bell pepper - 100 grams, diced
  • Tomato - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Za'atar spice mix - 1 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced zucchini, eggplant, and bell pepper to the skillet and sauté for about 5-7 minutes until they start to soften.
  3. Stir in the chopped red onion and minced garlic, cooking for an additional 2-3 minutes until the onion is translucent.
  4. Add the diced tomatoes, salt, black pepper, and za'atar spice mix. Cook for another 5 minutes, stirring occasionally until the tomatoes soften.
  5. Remove the skillet from heat and stir in the fresh parsley and lemon juice.
  6. Serve the mixture warm, drizzled with the remaining tablespoon of olive oil and topped with crumbled feta cheese if desired.
