- Eggplant - 100 grams, diced
- Bell pepper - 100 grams, diced
- Tomato - 100 grams, diced
- Red onion - 50 grams, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Za'atar spice mix - 1 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced zucchini, eggplant, and bell pepper to the skillet and sauté for about 5-7 minutes until they start to soften.
- Stir in the chopped red onion and minced garlic, cooking for an additional 2-3 minutes until the onion is translucent.
- Add the diced tomatoes, salt, black pepper, and za'atar spice mix. Cook for another 5 minutes, stirring occasionally until the tomatoes soften.
- Remove the skillet from heat and stir in the fresh parsley and lemon juice.
- Serve the mixture warm, drizzled with the remaining tablespoon of olive oil and topped with crumbled feta cheese if desired.
