Ingredients
- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Medium onion - 1, sliced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
- Yogurt - 150 grams
- Fresh mint - for garnish
Steps
- Rinse the lentils under cold water and soak them in a bowl for 15 minutes.
- In a pot, heat 1 tablespoon of olive oil over medium heat and add the sliced onion. Cook until caramelized, about 10-15 minutes, stirring occasionally.
- Remove half of the caramelized onions and set aside for topping.
- In the same pot with the remaining onions, add the soaked lentils, rice, cumin, salt, and black pepper. Stir well.
- Pour in the water and bring to a boil, then reduce heat to low, cover the pot, and simmer for 20-25 minutes, or until the lentils and rice are tender and the water is absorbed.
- While the moujaddara is cooking, prepare the yogurt sauce by mixing the yogurt with a pinch of salt and a drizzle of olive oil.
- Once the moujaddara is cooked, fluff it with a fork and let it sit for a few minutes before serving.
- Serve the moujaddara warm, topped with the reserved caramelized onions and a dollop of yogurt sauce, garnished with fresh mint.
