Ingredients

  • Green lentils - 100 grams
  • Long-grain rice - 100 grams
  • Medium onion - 1, sliced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 500 milliliters
  • Yogurt - 150 grams
  • Fresh mint - for garnish

Steps

  1. Rinse the lentils under cold water and soak them in a bowl for 15 minutes.
  2. In a pot, heat 1 tablespoon of olive oil over medium heat and add the sliced onion. Cook until caramelized, about 10-15 minutes, stirring occasionally.
  3. Remove half of the caramelized onions and set aside for topping.
  4. In the same pot with the remaining onions, add the soaked lentils, rice, cumin, salt, and black pepper. Stir well.
  5. Pour in the water and bring to a boil, then reduce heat to low, cover the pot, and simmer for 20-25 minutes, or until the lentils and rice are tender and the water is absorbed.
  6. While the moujaddara is cooking, prepare the yogurt sauce by mixing the yogurt with a pinch of salt and a drizzle of olive oil.
  7. Once the moujaddara is cooked, fluff it with a fork and let it sit for a few minutes before serving.
  8. Serve the moujaddara warm, topped with the reserved caramelized onions and a dollop of yogurt sauce, garnished with fresh mint.
