- Green lentils - 100 grams
- Basmati rice - 100 grams
- Large onion - 1, sliced thinly
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Water - 600 milliliters
Steps
- Rinse the lentils under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed lentils and 400 milliliters of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender but not mushy.
- Add the basmati rice, cumin powder, salt, and pepper to the lentils, stirring to combine. Add the remaining 200 milliliters of water and bring to a boil again.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes until the rice is cooked and water is absorbed.
- While the lentils and rice are cooking, heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized and golden brown, about 10-15 minutes.
- Once the rice and lentils are ready, fluff them with a fork and serve topped with the caramelized onions.
