Ingredients

  • Green lentils - 100 grams
  • Basmati rice - 100 grams
  • Large onion - 1, sliced thinly
  • Olive oil - 3 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 600 milliliters

Steps

  1. Rinse the lentils under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed lentils and 400 milliliters of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender but not mushy.
  3. Add the basmati rice, cumin powder, salt, and pepper to the lentils, stirring to combine. Add the remaining 200 milliliters of water and bring to a boil again.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-18 minutes until the rice is cooked and water is absorbed.
  5. While the lentils and rice are cooking, heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they are deeply caramelized and golden brown, about 10-15 minutes.
  6. Once the rice and lentils are ready, fluff them with a fork and serve topped with the caramelized onions.
