Moujaddara Bil Laban

Ingredients
- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 medium, thinly sliced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Water - 500 milliliters
- Plain yogurt - 150 grams
- Fresh mint leaves - for garnish
Steps
- Rinse the lentils and soak them in water for about 15 minutes, then drain.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until golden brown, about 10 minutes. Remove half of the onions and set aside for topping.
- Add the soaked lentils to the saucepan with the remaining onions and stir for 2 minutes.
- Add the rice, salt, black pepper, and cumin to the lentils and onions, stirring to combine.
- Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the rice and lentils are tender and the water is absorbed.
- In a small bowl, mix the yogurt with a pinch of salt and set aside.
- Once cooked, fluff the lentils and rice mixture with a fork. Serve topped with the reserved caramelized onions and a dollop of yogurt on the side.
- Garnish with fresh mint leaves before serving.
