Ingredients

  • Green lentils - 100 grams
  • Long-grain rice - 100 grams
  • Onion - 1 medium, thinly sliced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Water - 500 milliliters
  • Plain yogurt - 150 grams
  • Fresh mint leaves - for garnish

Steps

  1. Rinse the lentils and soak them in water for about 15 minutes, then drain.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook until golden brown, about 10 minutes. Remove half of the onions and set aside for topping.
  3. Add the soaked lentils to the saucepan with the remaining onions and stir for 2 minutes.
  4. Add the rice, salt, black pepper, and cumin to the lentils and onions, stirring to combine.
  5. Pour in the water, bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until the rice and lentils are tender and the water is absorbed.
  6. In a small bowl, mix the yogurt with a pinch of salt and set aside.
  7. Once cooked, fluff the lentils and rice mixture with a fork. Serve topped with the reserved caramelized onions and a dollop of yogurt on the side.
  8. Garnish with fresh mint leaves before serving.
