Moujadara with Yogurt

Ingredients
- Green lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 large, thinly sliced
- Olive oil - 3 tablespoons
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Yogurt - 200 grams (preferably Greek)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the green lentils under cold water and place them in a saucepan with 400 ml of water. Bring to a boil, then reduce the heat and simmer for about 15 minutes until tender.
- While the lentils cook, rinse the rice under cold water until the water runs clear. Set aside.
- In a separate pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and brown, about 10-15 minutes. Remove half of the onions and set aside for topping.
- To the remaining onions in the pot, add the drained lentils, rinsed rice, ground cumin, salt, and pepper. Stir to combine.
- Add 400 ml of water to the pot and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the water is absorbed.
- While the moujadara is cooking, prepare the yogurt by mixing it with a pinch of salt and a drizzle of olive oil if desired.
- Once the moujadara is done, fluff it with a fork and serve warm topped with the reserved caramelized onions and a side of yogurt. Garnish with chopped parsley.
