Ingredients

  • Green lentils - 100 grams
  • Long-grain rice - 100 grams
  • Onion - 1 large, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Yogurt - 200 grams (preferably Greek)
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the green lentils under cold water and place them in a saucepan with 400 ml of water. Bring to a boil, then reduce the heat and simmer for about 15 minutes until tender.
  2. While the lentils cook, rinse the rice under cold water until the water runs clear. Set aside.
  3. In a separate pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and brown, about 10-15 minutes. Remove half of the onions and set aside for topping.
  4. To the remaining onions in the pot, add the drained lentils, rinsed rice, ground cumin, salt, and pepper. Stir to combine.
  5. Add 400 ml of water to the pot and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the water is absorbed.
  6. While the moujadara is cooking, prepare the yogurt by mixing it with a pinch of salt and a drizzle of olive oil if desired.
  7. Once the moujadara is done, fluff it with a fork and serve warm topped with the reserved caramelized onions and a side of yogurt. Garnish with chopped parsley.
