Moujadara with Spinach

Ingredients
- Brown lentils - 100 grams
- Long-grain rice - 100 grams
- Fresh spinach - 150 grams, washed and chopped
- Large onion - 1, thinly sliced
- Olive oil - 3 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 ml
- Lemon - 1, for serving
Steps
- Rinse the brown lentils under cold water and soak them in water for about 30 minutes. Drain before use.
- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 10-12 minutes. Remove half of the onions and set aside for garnishing.
- To the pot with the remaining onions, add the soaked lentils, cumin powder, salt, and black pepper. Stir well for 2-3 minutes.
- Add the vegetable broth to the pot and bring to a boil. Once boiling, reduce the heat to low and cover. Simmer for about 15 minutes.
- After 15 minutes, add the rinsed rice and chopped spinach to the pot. Stir to combine, cover, and cook for an additional 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
- Serve the Moujadara warm, drizzled with the remaining olive oil and topped with the reserved caramelized onions. Squeeze fresh lemon juice over each serving.
