Ingredients

  • Brown lentils - 100 grams
  • Long-grain rice - 100 grams
  • Fresh spinach - 150 grams, washed and chopped
  • Large onion - 1, thinly sliced
  • Olive oil - 3 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 500 ml
  • Lemon - 1, for serving

Steps

  1. Rinse the brown lentils under cold water and soak them in water for about 30 minutes. Drain before use.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 10-12 minutes. Remove half of the onions and set aside for garnishing.
  3. To the pot with the remaining onions, add the soaked lentils, cumin powder, salt, and black pepper. Stir well for 2-3 minutes.
  4. Add the vegetable broth to the pot and bring to a boil. Once boiling, reduce the heat to low and cover. Simmer for about 15 minutes.
  5. After 15 minutes, add the rinsed rice and chopped spinach to the pot. Stir to combine, cover, and cook for an additional 15-20 minutes, or until the rice and lentils are tender and the liquid is absorbed.
  6. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
  7. Serve the Moujadara warm, drizzled with the remaining olive oil and topped with the reserved caramelized onions. Squeeze fresh lemon juice over each serving.
