Ingredients

  • Green lentils - 100 grams
  • Cauliflower rice - 200 grams
  • Onion - 2 medium, sliced
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender.
  2. While the lentils are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 15-20 minutes.
  3. Add minced garlic, cumin, cinnamon, salt, and black pepper to the skillet with the onions. Cook for another 2 minutes until fragrant.
  4. Once the lentils are cooked, drain any excess water and add them to the skillet with the onion mixture. Stir well to combine and cook for an additional 5 minutes to heat through.
  5. In a separate pan, heat the remaining tablespoon of olive oil over medium heat and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
  6. Serve the lentil mixture over the cauliflower rice, garnished with fresh parsley.
