- Green lentils - 100 grams
- Cauliflower rice - 200 grams
- Onion - 2 medium, sliced
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are deeply caramelized, about 15-20 minutes.
- Add minced garlic, cumin, cinnamon, salt, and black pepper to the skillet with the onions. Cook for another 2 minutes until fragrant.
- Once the lentils are cooked, drain any excess water and add them to the skillet with the onion mixture. Stir well to combine and cook for an additional 5 minutes to heat through.
- In a separate pan, heat the remaining tablespoon of olive oil over medium heat and add the cauliflower rice. Sauté for about 5-7 minutes until tender.
- Serve the lentil mixture over the cauliflower rice, garnished with fresh parsley.
