Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 100 grams
  • Water - 600 ml
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • White fish fillets (e.g., cod or tilapia) - 200 grams
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until tender.
  2. Add the basmati rice to the pot with the lentils, along with 300 ml of water, cumin, salt, and black pepper. Stir well, cover, and cook on low heat for 20 minutes or until the rice is fluffy and the water is absorbed.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10 minutes. Stir in the minced garlic and paprika, cooking for an additional 1 minute.
  4. Remove half of the onion mixture and set aside for garnish. Add the cooked lentil and rice mixture to the skillet, stirring to combine with the onion-garlic mix. Keep warm on low heat.
  5. Season the fish fillets with salt, black pepper, and lemon juice. In another pan, heat 1 tablespoon of olive oil over medium-high heat and cook the fish for about 3-4 minutes on each side until golden and cooked through.
  6. To serve, plate the lentil and rice mixture, top with the pan-seared fish, and garnish with the reserved caramelized onions and chopped parsley.
