Ingredients
- Brown lentils - 100 grams
- Long-grain rice - 100 grams
- Onion - 1 medium, thinly sliced
- Olive oil - 3 tablespoons
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 500 milliliters
Steps
- Rinse the brown lentils under cold water and soak them in water for about 30 minutes.
- In a medium pot, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook until they are caramelized, about 10-15 minutes, stirring occasionally.
- Remove half of the caramelized onions from the pot and set them aside for garnish.
- Add the soaked lentils to the pot with the remaining onions and add 500 milliliters of water. Bring to a boil, then reduce the heat and simmer for 15 minutes.
- Stir in the rice, cumin, salt, and black pepper. Cover the pot and cook on low heat for an additional 20 minutes, or until the rice and lentils are tender and the water is absorbed.
- Once done, fluff the mixture with a fork and serve hot, garnished with the reserved caramelized onions.
