Ingredients

  • Brown lentils - 100 grams
  • Basmati rice - 50 grams
  • Onion - 1 medium, finely sliced
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Whole wheat burger buns - 2
  • Plain yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the brown lentils under cold water and cook them in a pot with 300ml of water for about 20 minutes until tender. Drain and set aside.
  2. In a separate pot, cook the basmati rice according to package instructions and set aside.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until golden brown, about 10-15 minutes. Remove half for topping the burgers and set aside.
  4. Add minced garlic, cumin, coriander, salt, and black pepper to the remaining onions in the skillet. Cook for another 2 minutes.
  5. In a mixing bowl, combine the cooked lentils, rice, and the onion-spice mixture. Mix well and form into two patties.
  6. Heat the remaining olive oil in the skillet and cook the patties for about 4-5 minutes on each side until crispy and heated through.
  7. To prepare the yogurt sauce, mix the plain yogurt, chopped parsley, and lemon juice in a bowl. Season with salt to taste.
  8. Assemble the burgers by placing each lentil-rice patty on a whole wheat bun, topping with caramelized onions and a generous spoonful of the yogurt sauce. Serve immediately.
