Ingredients

  • Brown lentils - 150 grams
  • Long-grain rice - 100 grams
  • Onion - 1 large (about 150 grams)
  • Olive oil - 2 tablespoons
  • Water - 600 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Plain yogurt - 150 grams
  • Garlic - 1 clove
  • Cumin - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the brown lentils under cold water and place them in a pot with 400 milliliters of water. Bring to a boil and then reduce to a simmer for about 20 minutes until tender.
  2. In a separate pot, rinse the rice and add it to the cooked lentils along with 200 milliliters of water, salt, and black pepper. Cover and cook on low heat for about 15 minutes until the rice is fluffy and the water is absorbed.
  3. While the lentils and rice are cooking, thinly slice the onion. Heat the olive oil in a skillet over medium heat, add the onions, and cook until they are caramelized and golden brown, about 10-15 minutes, stirring occasionally.
  4. In a small bowl, mix the plain yogurt with minced garlic, cumin, lemon juice, and a pinch of salt to create the yogurt sauce.
  5. Once the lentils and rice are cooked, fluff them with a fork and serve them on a plate, topped with the caramelized onions. Drizzle the garlic yogurt sauce over the top and enjoy.
