Ingredients

  • Brown lentils - 100 grams
  • Medium rice (preferably basmati) - 100 grams
  • Large onion - 1, thinly sliced
  • Olive oil - 3 tablespoons
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 600 milliliters
  • Fresh parsley - for garnish (optional)

Steps

  1. Rinse the brown lentils under cold water until the water runs clear.
  2. In a pot, combine the rinsed lentils and 400 milliliters of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes until the lentils are tender but not mushy.
  3. While the lentils are cooking, rinse the rice under cold water until the water runs clear.
  4. In a separate saucepan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until they become golden brown and caramelized, about 10-15 minutes. Stir occasionally to prevent burning.
  5. Once the lentils are cooked, add the rice, remaining 200 milliliters of water, cumin, salt, and black pepper to the pot with the lentils. Stir gently to combine.
  6. Cover the pot and cook on low heat for about 20 minutes, or until the rice is tender and the water is absorbed.
  7. Once cooked, remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the moujadara with a fork and serve topped with the caramelized onions. Garnish with fresh parsley if desired.
