Ingredients

  • Roasted red bell peppers - 150 grams
  • Walnuts - 50 grams
  • Garlic - 1 clove
  • Olive oil - 2 tablespoons
  • Pomegranate molasses - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (adjust to taste)
  • Fresh lemon juice - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. If not using pre-roasted peppers, roast the red bell peppers on a baking sheet for 20-25 minutes until the skin is charred and blistered. Let them cool, then peel off the skin and remove the seeds.
  3. In a food processor, combine the roasted red peppers, walnuts, garlic, olive oil, pomegranate molasses, ground cumin, salt, cayenne pepper, lemon juice, and water.
  4. Blend the mixture until smooth, scraping down the sides as needed. Adjust the consistency by adding more water if desired.
  5. Taste and adjust seasoning, adding more salt or cayenne pepper if necessary.
  6. Transfer the Mouhamara to a serving bowl and drizzle a little olive oil on top before serving.
