- Labneh or yogurt - for topping - 100 grams
- Pine nuts (toasted) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, baking powder, salt, olive oil, garlic powder, and za'atar. Mix until a dough forms.
- Place the dough on a parchment-lined baking sheet and spread it out into a circular pizza shape, about 1/2 inch thick.
- Bake the crust in the preheated oven for 12-15 minutes or until golden brown.
- Remove the crust from the oven and let it cool slightly.
- Spread labneh or yogurt evenly over the pizza crust.
- Top with halved cherry tomatoes, sliced cucumbers, and sprinkle with chopped parsley and toasted pine nuts.
- Return the pizza to the oven for an additional 5-7 minutes to warm the toppings.
- Remove from the oven, slice, and serve warm.
