- Zucchini - 200 grams, thinly sliced
- Whole wheat pita bread - 2 pieces
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Tomato - 1 medium, diced
- Red onion - 1/4, thinly sliced
- Nutritional yeast - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine the sliced zucchini, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper. Toss well to coat the zucchini evenly.
- Spread the seasoned zucchini on a baking sheet and roast in the preheated oven for 15 minutes, or until tender and slightly golden.
- While the zucchini is roasting, prepare the pita bread by placing it on another baking sheet.
- Once the zucchini is done, remove it from the oven and layer the roasted zucchini, diced tomato, and sliced red onion evenly over each pita bread.
- Sprinkle nutritional yeast and chopped parsley on top of the vegetables.
- Return the assembled pita breads to the oven and bake for an additional 10 minutes, or until the edges are crispy.
- Once done, drizzle with lemon juice before serving.
