Ingredients

  • Zucchini - 200 grams, thinly sliced
  • Whole wheat pita bread - 2 pieces
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium, diced
  • Red onion - 1/4, thinly sliced
  • Nutritional yeast - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the sliced zucchini, olive oil, minced garlic, ground cumin, paprika, salt, and black pepper. Toss well to coat the zucchini evenly.
  3. Spread the seasoned zucchini on a baking sheet and roast in the preheated oven for 15 minutes, or until tender and slightly golden.
  4. While the zucchini is roasting, prepare the pita bread by placing it on another baking sheet.
  5. Once the zucchini is done, remove it from the oven and layer the roasted zucchini, diced tomato, and sliced red onion evenly over each pita bread.
  6. Sprinkle nutritional yeast and chopped parsley on top of the vegetables.
  7. Return the assembled pita breads to the oven and bake for an additional 10 minutes, or until the edges are crispy.
  8. Once done, drizzle with lemon juice before serving.
