Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Fresh spinach - 150 grams, chopped
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Ground cumin - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams, toasted
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until foamy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, then add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- While the dough is rising, prepare the spinach filling. In a skillet, heat a tablespoon of olive oil over medium heat, then add the chopped onion and sauté until translucent.
- Add the minced garlic, chopped spinach, ground cumin, ground coriander, black pepper, and salt to the skillet. Cook until the spinach is wilted and any excess moisture has evaporated. Remove from heat and stir in the chopped parsley, lemon juice, and toasted pine nuts. Let the filling cool.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter on a floured surface.
- Transfer the rolled dough to a baking sheet lined with parchment paper. Spread an equal amount of the spinach filling over each dough circle, leaving a small border around the edges.
- Bake in the preheated oven for about 15-20 minutes or until the edges are golden brown.
- Remove from the oven, let cool slightly, and cut into slices to serve.
