Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 10 grams, chopped
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - to taste
  • Tomato paste - 30 grams
  • Lemon juice - 10 ml

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a separate mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until it forms a dough, then knead for about 5-7 minutes on a floured surface until smooth. Place in a greased bowl, cover with a cloth, and let rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a skillet over medium heat. Add a splash of olive oil, then sauté the chopped onion and minced garlic until translucent.
  5. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes.
  6. Stir in the ground cumin, paprika, black pepper, and chopped parsley. Remove from heat and let cool slightly.
  7. Preheat the oven to 220°C (430°F).
  8. Once the dough has risen, punch it down and roll it out into two round bases, about 1 cm thick.
  9. Spread a thin layer of tomato paste on each dough base, then top with the mushroom mixture, spreading it evenly.
  10. Drizzle with lemon juice and bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  11. Remove from the oven, let cool for a few minutes, then slice and serve warm.
