Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Mushrooms (button or cremini) - 200 grams, sliced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 10 grams, chopped
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - to taste
- Tomato paste - 30 grams
- Lemon juice - 10 ml
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a separate mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until it forms a dough, then knead for about 5-7 minutes on a floured surface until smooth. Place in a greased bowl, cover with a cloth, and let rise for 30 minutes in a warm place.
- While the dough is rising, heat a skillet over medium heat. Add a splash of olive oil, then sauté the chopped onion and minced garlic until translucent.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes.
- Stir in the ground cumin, paprika, black pepper, and chopped parsley. Remove from heat and let cool slightly.
- Preheat the oven to 220°C (430°F).
- Once the dough has risen, punch it down and roll it out into two round bases, about 1 cm thick.
- Spread a thin layer of tomato paste on each dough base, then top with the mushroom mixture, spreading it evenly.
- Drizzle with lemon juice and bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
