- Active dry yeast - 7 grams

- Zucchini - 200 grams, grated
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons (optional)
Steps
- In a bowl, mix the warm water with the active dry yeast and let it sit for 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes.
- While the dough is rising, prepare the filling. In a pan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
- Add the grated zucchini, diced tomato, cumin, paprika, black pepper, and salt to the pan. Cook for about 5-7 minutes until the zucchini is tender and the mixture is well combined. Stir in the chopped parsley and lemon juice, then remove from heat.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 10 inches in diameter.
- Place the rolled dough circles on baking sheets lined with parchment paper. Spread the zucchini filling evenly over each base, leaving a small border around the edges.
- If using, sprinkle nutritional yeast over the top for added flavor.
