Ingredients

  • All-purpose flour - 200 grams
  • Water - 120 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zucchini - 200 grams, grated
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons (optional)

Steps

  1. In a bowl, mix the warm water with the active dry yeast and let it sit for 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes.
  4. While the dough is rising, prepare the filling. In a pan, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  5. Add the grated zucchini, diced tomato, cumin, paprika, black pepper, and salt to the pan. Cook for about 5-7 minutes until the zucchini is tender and the mixture is well combined. Stir in the chopped parsley and lemon juice, then remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 10 inches in diameter.
  8. Place the rolled dough circles on baking sheets lined with parchment paper. Spread the zucchini filling evenly over each base, leaving a small border around the edges.
  9. If using, sprinkle nutritional yeast over the top for added flavor.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
