- Warm water - 150 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Fresh parsley - 30 grams, chopped
- Fresh mint - 15 grams, chopped
- Nutritional yeast - 50 grams
- Vegan mozzarella cheese - 100 grams, shredded
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- In a bowl, mix the chopped parsley, chopped mint, nutritional yeast, shredded vegan mozzarella cheese, black pepper, and paprika until well combined.
- Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a circle about 25 cm in diameter.
- Transfer each rolled dough onto a baking sheet lined with parchment paper.
- Spread the filling evenly over one half of each dough circle, then fold the other half over to create a pocket. Pinch the edges to seal.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, and serve warm.
