Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Nutritional yeast - 50 grams
  • Vegan mozzarella cheese - 100 grams, shredded
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  5. Preheat the oven to 220°C (428°F).
  6. In a bowl, mix the chopped parsley, chopped mint, nutritional yeast, shredded vegan mozzarella cheese, black pepper, and paprika until well combined.
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a circle about 25 cm in diameter.
  8. Transfer each rolled dough onto a baking sheet lined with parchment paper.
  9. Spread the filling evenly over one half of each dough circle, then fold the other half over to create a pocket. Pinch the edges to seal.
  10. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  11. Remove from the oven, let cool for a few minutes, and serve warm.
