Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Olive oil - 2 tablespoons
- Active dry yeast - 1 teaspoon
- Salt - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Zaatar spice - 2 tablespoons
- Tomato - 1 medium, diced
- Cucumber - 1 small, diced
- Radish - 4, thinly sliced
- Red onion - 1/4, thinly sliced
- Bell pepper - 1/2, diced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Sumac - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
- In a separate bowl, mix the all-purpose flour, salt, and baking powder. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, roll it out into two circles about 1/4 inch thick.
- Transfer the dough circles to a baking sheet lined with parchment paper.
- In a bowl, combine diced tomatoes, cucumber, radish, red onion, bell pepper, parsley, lemon juice, sumac, salt, and pepper. Mix well.
- Spread the vegetable mixture evenly over the dough circles.
- Sprinkle zaatar spice on top of the vegetables.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden and crispy.
- Remove from the oven and let cool slightly before slicing. Serve warm.
