Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Olive oil - 2 tablespoons
  • Active dry yeast - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Zaatar spice - 2 tablespoons
  • Tomato - 1 medium, diced
  • Cucumber - 1 small, diced
  • Radish - 4, thinly sliced
  • Red onion - 1/4, thinly sliced
  • Bell pepper - 1/2, diced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Sumac - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine warm water, active dry yeast, and a pinch of sugar. Let it sit for 5-10 minutes until frothy.
  2. In a separate bowl, mix the all-purpose flour, salt, and baking powder. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let it rise for 30 minutes or until doubled in size.
  4. Preheat the oven to 220°C (428°F).
  5. Once the dough has risen, roll it out into two circles about 1/4 inch thick.
  6. Transfer the dough circles to a baking sheet lined with parchment paper.
  7. In a bowl, combine diced tomatoes, cucumber, radish, red onion, bell pepper, parsley, lemon juice, sumac, salt, and pepper. Mix well.
  8. Spread the vegetable mixture evenly over the dough circles.
  9. Sprinkle zaatar spice on top of the vegetables.
  10. Bake in the preheated oven for 15-20 minutes or until the edges are golden and crispy.
  11. Remove from the oven and let cool slightly before slicing. Serve warm.
