- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Chickpeas (cooked or canned) - 200 grams
- Tahini - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
- Pine nuts - 30 grams, toasted
Steps
- In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 30 minutes or until doubled in size.
- While the dough is rising, prepare the chickpea topping. In a mixing bowl, combine chickpeas, tahini, minced garlic, lemon juice, ground cumin, ground coriander, paprika, and black pepper. Mash slightly with a fork, leaving some chickpeas whole for texture.
- Once the dough has risen, preheat the oven to 220°C (428°F).
- Roll out the dough on a floured surface to about 1 cm thick and transfer to a baking sheet lined with parchment paper.
- Spread the chickpea mixture evenly over the dough, leaving a small border around the edges.
- Sprinkle with chopped parsley and toasted pine nuts.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
- Remove from the oven, let cool slightly, slice, and serve warm.
