Ingredients

  • Active dry yeast - 5 grams
  • Olive oil - 30 ml
  • Salt - 5 grams
  • Greek yogurt - 50 grams
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Fresh parsley - 10 grams, chopped
  • Black pepper - 1 gram
  • Za'atar spice - 5 grams
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a small bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a cloth, and let it rise for 30 minutes in a warm place.
  4. Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper.
  5. Once the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.
  6. Spread the Greek yogurt evenly over the dough, leaving a small border around the edges.
