- Cauliflower - 300 grams
- Chickpea flour - 50 grams
- Water - 100 ml
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 1 small, diced
- Red onion - 1 small, sliced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Wash and chop the cauliflower into small florets, then steam or boil for about 5-7 minutes until tender. Drain and let cool.
- In a large mixing bowl, combine the steamed cauliflower, chickpea flour, water, olive oil, garlic powder, cumin, paprika, salt, and black pepper. Mix until well combined and the mixture forms a dough-like consistency.
- Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza base about 1 cm thick.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden and crispy.
- While the base is baking, prepare the toppings: In a bowl, combine the cherry tomatoes, bell pepper, red onion, parsley, and lemon juice. Toss to mix well.
- Once the pizza base is done baking, remove it from the oven and evenly distribute the vegetable topping over the base.
- Return the pizza to the oven and bake for an additional 10 minutes.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
