Ingredients

  • Cauliflower - 300 grams
  • Chickpea flour - 50 grams
  • Water - 100 ml
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 1 small, diced
  • Red onion - 1 small, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and chop the cauliflower into small florets, then steam or boil for about 5-7 minutes until tender. Drain and let cool.
  3. In a large mixing bowl, combine the steamed cauliflower, chickpea flour, water, olive oil, garlic powder, cumin, paprika, salt, and black pepper. Mix until well combined and the mixture forms a dough-like consistency.
  4. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a round pizza base about 1 cm thick.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are golden and crispy.
  6. While the base is baking, prepare the toppings: In a bowl, combine the cherry tomatoes, bell pepper, red onion, parsley, and lemon juice. Toss to mix well.
  7. Once the pizza base is done baking, remove it from the oven and evenly distribute the vegetable topping over the base.
  8. Return the pizza to the oven and bake for an additional 10 minutes.
  9. Remove from the oven, let cool for a few minutes, slice, and serve warm.
