Ingredients
- All-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 5 grams
- Olive oil - 15 ml
- Salt - 5 grams
- Black pepper - 2 grams
- Zucchini - 100 grams, finely diced
- Bell pepper - 100 grams, finely diced
- Red onion - 50 grams, finely chopped
- Tomato - 100 grams, finely diced
- Fresh parsley - 15 grams, chopped
- Ground cumin - 2 grams
- Ground coriander - 2 grams
- Pine nuts - 30 grams, toasted
- Lemon juice - 15 ml
Steps
- In a small bowl, mix warm water and active dry yeast. Let it sit for 5 minutes until frothy.
- In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, prepare the topping. In a skillet, heat a tablespoon of olive oil over medium heat. Add the red onion and sauté for 2-3 minutes until translucent.
- Add the zucchini, bell pepper, and tomato to the skillet. Season with black pepper, ground cumin, and ground coriander. Cook for another 5 minutes until softened.
- Remove from heat and stir in the chopped parsley, toasted pine nuts, and lemon juice. Set the mixture aside to cool slightly.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal balls. Roll each ball out into a circle about 25 cm in diameter.
- Transfer the rolled dough to a baking sheet lined with parchment paper. Spread the vegetable mixture evenly over each dough round, leaving a small border around the edges.
- Bake in the preheated oven for 15-20 minutes until the crust is golden brown and crispy.
- Remove from the oven and allow to cool for a few minutes before slicing. Serve warm.
