Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 15 ml
  • Salt - 5 grams
  • Black pepper - 2 grams
  • Zucchini - 100 grams, finely diced
  • Bell pepper - 100 grams, finely diced
  • Red onion - 50 grams, finely chopped
  • Tomato - 100 grams, finely diced
  • Fresh parsley - 15 grams, chopped
  • Ground cumin - 2 grams
  • Ground coriander - 2 grams
  • Pine nuts - 30 grams, toasted
  • Lemon juice - 15 ml

Steps

  1. In a small bowl, mix warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, prepare the topping. In a skillet, heat a tablespoon of olive oil over medium heat. Add the red onion and sauté for 2-3 minutes until translucent.
  5. Add the zucchini, bell pepper, and tomato to the skillet. Season with black pepper, ground cumin, and ground coriander. Cook for another 5 minutes until softened.
  6. Remove from heat and stir in the chopped parsley, toasted pine nuts, and lemon juice. Set the mixture aside to cool slightly.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, punch it down and divide it into two equal balls. Roll each ball out into a circle about 25 cm in diameter.
  9. Transfer the rolled dough to a baking sheet lined with parchment paper. Spread the vegetable mixture evenly over each dough round, leaving a small border around the edges.
  10. Bake in the preheated oven for 15-20 minutes until the crust is golden brown and crispy.
  11. Remove from the oven and allow to cool for a few minutes before slicing. Serve warm.
