Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Potatoes - 300 grams
  • Tahini - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste

Steps

  1. In a bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In another bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Cover and let rise for 30 minutes.
  4. Meanwhile, peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes, then drain.
  5. In a bowl, mash the potatoes and mix in tahini, minced garlic, cumin, paprika, lemon juice, parsley, and black pepper to taste.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions and roll each out on a floured surface to about 0.5 cm thick.
  8. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  9. Spread the mashed potato mixture evenly over each dough base.
  10. Bake in the preheated oven for 15-20 minutes until the crust is golden and crisp.
  11. Remove from the oven, let cool for a few minutes, then slice and serve warm.
