- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Potatoes - 300 grams
- Tahini - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - to taste
Steps
- In a bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In another bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Cover and let rise for 30 minutes.
- Meanwhile, peel and chop the potatoes. Boil them in salted water until tender, about 15-20 minutes, then drain.
- In a bowl, mash the potatoes and mix in tahini, minced garlic, cumin, paprika, lemon juice, parsley, and black pepper to taste.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions and roll each out on a floured surface to about 0.5 cm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spread the mashed potato mixture evenly over each dough base.
- Bake in the preheated oven for 15-20 minutes until the crust is golden and crisp.
- Remove from the oven, let cool for a few minutes, then slice and serve warm.
