Ingredients

  • Cauliflower - 300 grams, riced
  • Eggs - 2 large
  • Almond flour - 50 grams
  • Fresh parsley - 30 grams, chopped
  • Green onions - 30 grams, finely chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the riced cauliflower, almond flour, chopped parsley, green onions, cumin, paprika, salt, and black pepper.
  3. Add the eggs to the mixture and stir until well combined.
  4. Grease a baking sheet with 1 tablespoon of olive oil.
  5. Scoop the cauliflower mixture onto the baking sheet, forming small patties.
  6. Drizzle the remaining olive oil over the patties.
  7. Bake in the preheated oven for 25 minutes, or until golden brown and cooked through, flipping halfway through the baking time.
