- All-purpose flour - 200 grams
- Warm water - 120 milliliters
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Zaatar spice mix - 2 tablespoons
- Tomato - 1 medium, thinly sliced
- Bell pepper - 1 small, thinly sliced
- Red onion - 1 small, thinly sliced
- Olives - 50 grams, pitted and sliced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes, until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a towel, and let it rise in a warm place for 30 minutes or until doubled in size.
- Preheat the oven to 220°C (430°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into a circle about 25 cm in diameter.
- Place the rolled dough on a baking sheet lined with parchment paper.
- Spread the zaatar spice mix evenly over the dough, then top with sliced tomatoes, bell peppers, red onions, and olives.
- Drizzle with a little olive oil and a squeeze of lemon juice over the top.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown.
- Remove from the oven, sprinkle with fresh parsley, slice, and serve warm.
